Bean & Rice Salad - great for pot lucks
INGREDIENTS
- 1 cup white rice
- 1 cup canned black beans, drained
- 1 cup canned kidney beans, drained
- 1 cup whole corn kernels, cooked
- 1/2 cup chopped green onions
- 1 red bell pepper, chopped
- 1/4 cup chopped fresh cilantro
- 1/4 cup red wine vinegar
- 1 clove garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon crushed red pepper flakes
- 1/4 teaspoon ground black pepper
- 1/2 cup olive oil
DIRECTIONS
- Cook the rice according to package directions. Let cool.
- In a large bowl, combine the cooled rice, black beans, kidney beans, corn, onions, red bell pepper and cilantro. Mix well.
- To make dressing: In a small bowl, whisk together vinegar, garlic, chili powder, salt, red pepper flakes and black pepper. Whisk in oil and pour over salad and toss well.
For less fat, you can double the vinegar and 1/2 the olive oil (depends on your taste for vinegar). I also 1/2 the chili powder if making for my mom, because she doesn't like anything spicy.
Easy Sugar Cookies
INGREDIENTS
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 cup butter, softened
- 1 1/2 cups white sugar
- 1 egg
- 1 teaspoon vanilla extract
DIRECTIONS
- Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
- In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets.
- Bake 8 to 10 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.
These are super easy and good plain or with frosting, candies, whatever you like. And the ingredients are usually on hand so you can make them whenever a craving strikes! Don't know if that's good or bad : )

Mushroom Stuffing Balls - Look ugly, taste great.
INGREDIENTS
- 8 ounces fresh mushrooms, chopped
- 1 medium onion, chopped
- 1/2 cup butter, melted
- 4 eggs, beaten
- 2 teaspoons dried parsley flakes
- 1/8 teaspoon garlic powder
- 1/2 cup grated Parmesan cheese
- 2 1/2 cups seasoned dry bread crumbs
DIRECTIONS
- Preheat the oven to 350 degrees F (175 degrees C).
- In a large bowl, mix together the mushrooms, onion, butter, eggs, parsley, garlic powder, and Parmesan cheese until creamy. Gradually mix in bread crumbs until the mixture is stiff enough to shape into balls. Form into 2 inch balls, and place on cookie sheets.
- Bake for 18 minutes in the preheated oven, until the bottoms are lightly browned. Arrange on a serving tray and serve hot or warm.
carrot rice
INGREDIENTS
- 1 cup basmati rice
- 2 cups water
- 1/4 cup roasted peanuts
- 1 tablespoon margarine
- 1 onion, sliced
- 1 teaspoon ginger root, minced
- 3/4 cup grated carrots
- salt to taste
- cayenne pepper to taste
DIRECTIONS
- Combine rice and water in a medium saucepan. Bring to a boil over high heat. Reduce heat to low, cover with lid, and allow to steam until tender, about 20 minutes.
- While rice is cooking, pulverize peanuts in a blender and set aside. Melt margarine in a large skillet over medium-high heat. Saute onions until golden brown. Stir in ginger, carrots, and salt to taste. Reduce heat to low and cover to steam 5 minutes. Stir in cayenne pepper and peanuts. When rice is done, add it to skillet and stir gently to combine with other ingredients. Garnish with chopped cilantro.

In search of a Muttar Paneer recipe!
Or it may be that I am asking for the wrong thing... it may be more of a marsala sauce that I'm looking for. I like the creamy, saucy version with peas or mushrooms and paneer. Can anyone help? The best explanation I get from the restaurant is that it's a tomato gravy with an onion gravy. : ) I can buy the paneer at an Indian market nearby so I really just need a good sauce. Thanks in advance for your help!

Peppermint Brittle Ingredients Directions Place candy canes in a plastic bag, or between two pieces of waxed paper. Using a mallet or rolling pin, break the candy canes into chunks. Stir peppermint into melted white chocolate. Spread evenly in pan, and chill until set (about 1 hour). Break into pieces by slamming pan on counter. |

Portabello "Pizzas"
Ingredients:
Portabello mushroom cap(s)
Italian Dressing (or your favorite marinade)
Ziploc(s)
Pasta sauce
Choice of toppings (I am going to describe with basil, roasted red pepper and mozarella)
Directions:
Place each cap into a ziploc with some italian dressing, swish it around and let it sit for about 25 minutes.
Grill/fry in frying pan the portabello cap until it is cooked through (for a large cap about 8 minutes each side)
Spray a baking dish or cookie sheet with cooking spray. Place the mushroom cap (rounded side down) on the sheet. Add a spoonful of pasta sauce, basil, roasted red pepper, and then a slice of cheese. Bake at 350 until the cheese is melty.
I can't eat bread, so I really enjoy these "pizzas" as a nice alternative and you can mix it up with pretty much any sauce/toppings you like.

For those of you (like me) with yappy dogs
The citronella bark collar has saved my poodle from being poisoned by a neighbor while I'm at work! I am so happy with this product, I can't even tell you. She was/is a constant yapper and this just gives a spray when she barks... and she stops. It's fantastic... and I no longer have to worry about poison hamburgers being thrown over the fence! : ) (She can't be in the house without supervision due to behavior issues and I don't think it's fair to leave her in a crate all day). So, just wanted to share that for other friends of yappy dogs. Happy Holidays! ChrisHow's Your News? Excellent movie.
The summer camp this group go to did a How's Your News show for themselves with people of different levels of disability doing the interviews, sound, etc. They really loved doing it. The guys who make South Park found out about it and gave them the money to tour the country doing their Hows Your News show. So they took a big road trip and interviewed people across America. It was very interesting to see how people reacted so differently to them. And it looks like they had a very good time making the movie. It's news from a different point of view, and from people who don't always get a lot of attention in our society. Netflix it, it's very heart warming. I posted it on my movie blog on the Inspirational Movies because it is inspirational.
I REALLY want to see this movie.

Hot or Cold Vegetable Frittata
INGREDIENTS
- 3 tablespoons vegetable oil
- 1 1/2 cups chopped zucchini
- 1 1/2 cups chopped fresh mushrooms
- 3/4 cup chopped onion
- 1 clove garlic, minced
- 6 eggs, beaten
- 1/4 cup milk
- 1 (8 ounce) packages cream cheese, diced
- 2 cups shredded Cheddar cheese
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
DIRECTIONS
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
- In a large skillet or frying pan, heat oil over medium high heat. Add zucchini, mushrooms, onion, green pepper and garlic; saute until tender. Remove from heat and let cool slightly.
- In a large bowl, beat together the eggs and cream. Stir in cream cheese, cheddar cheese, and sauteed vegetables. Season with salt and pepper. Mix well and pour into prepared baking dish.
- Bake in preheated oven for one hour, or until center is set. Serve hot or cold.
I modified this recipe, which used to include green pepper and cubed bread. I find that if I leave out the pepper, I don't need the bread. Sometimes if I think the vegetables are too wet, I add some bread crumbs to the bottom of the baking dish or I stir some into the mixture.

Corn Casserole - Thanksgiving hit!
INGREDIENTS
- 2 eggs, beaten
- 1 (15 ounce) can cream-style corn
- 1 (8 ounce) container sour cream
- 1/4 cup butter, melted
- 1 (15.25 ounce) can whole kernel corn, drained
- 1 1/2 cups shredded Cheddar cheese
- 1/2 cup chopped onion
- 1 (4 ounce) can diced green chilies, drained
- 1 (8.5 ounce) package dry corn muffin mix
DIRECTIONS
- Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart casserole dish.
- In a large mixing bowl, combine eggs, cream style corn, sour cream and melted butter. Stir in whole kernel corn, cheese, onion and chilies. Stir in the corn muffin mix until just moistened.
- Bake in a preheated 350 degrees F (175 degrees C) oven for 75 minutes; or until an inserted knife comes out clean and the top is golden. Let stand 5 minutes before serving.

Paradise Pumpkin Pie (YUM!)
INGREDIENTS1 (8 ounce) package cream cheese, softened
1/4 cup sugar
1/2 teaspoon vanilla extract
1 egg
1 (9 inch) unbaked pastry shell
FILLING:
1 (16 ounce) can solid pack pumpkin
1 cup evaporated milk
2 eggs, beaten
1/4 cup sugar
1/4 cup packed brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
DIRECTIONS
In a mixing bowl, beat cream cheese until smooth. Add sugar and vanilla; mix well. Add egg; beat until smooth. Spread over bottom of pie shell. Chill 30 minutes. In a mixing bowl, beat filling ingredients until smooth. Carefully pour over the cream cheese layer. Cover edge of pie with foil. Bake at 350 degrees F for 30 minutes. Remove foil; bake 35-40 minutes longer, until a knife inserted near the center comes out clean. Cool on a wire rack. Store in the refrigerator.
